Bhindi ki subzi is an easy to prepare indian dish. All you need is bhindi (Okra), onion, green chillies, garlic and some basic spices. This subzi tastes great with indian bread/ Phulka roti.
Servings: 2-3 persons
Meal: Lunch/Dinner
Ingredients:
- Chopped okras- 500 gm.
- Chopped potatoes- 2 medium size
- Chopped onion- 1/2 medium size
- Chopped garlic- 2 cloves
- Green chilly- 1
- Salt- (according to taste)
- Red chilly powder- 1 tsp.
- Garam masala- 1 tsp.
- Coriander powder- 2 tsp.
Garnish:
- saute onion, cilantro
Preparation:
Step 1: Fry potatoes in a pan
- Heat the pan on medium flame
- Put oil in pan once it is hot enough
- Now, add potatoes and let it cook (approximately 15-20 minutes) until it is ready
- Remove potatoes in a bowl/plate
Step 2: Final step
- Use the same pan and put 1-2 tsp. oil in that
- Add cumin seeds, ajwain in oil and let it crackle
- Add green chillies, garlic and sauté it for 2-3 minutes
- Add okras, salt in the mixture and cook it until it is ready
- Now, add fried potatoes and all spices ( red chilly powder, coriander powder, garam masala)
- Cook this mixture for 5 mins and let it simmer. Your subzi is ready ! 🙂

Meal: Breakfast
Servings: 2 persons
Ingredients:
Eggs – 4
Wheat bread- 4 slices
Chopped onion- 1/2 medium size
Chopped cilantro- 1 tsp.
Chopped ginger- 1 tsp.
Black pepper- 1/4 tsp.
Garam masala- 1/4 tsp.
Cheddar cheese – 2 tsp.
Feta cheese – 4 tsp.
Salt – according to taste
Oil
Preparation:
Step 1: Prepare egg mixture
- Whisk the eggs vigorously with fork until it is completely blended
- Add chopped vegetables (onion, cilantro and ginger), spices (salt, black pepper, garam masala) and cheddar cheese
- Mix it well using the fork.
Step 2: Final touch
- Put oil on pan and heat it on medium flame
- Dip both the sides of the bread in prepared egg mixture
- Put the egg bread on pan and let both the sides cook for 2-3 minutes each
Garnishing:
- Sprinkle feta cheese

Spring has already started in Chicago. Today is Friday night with pleasant rainy weather. Thought came in my mind to prepare delicious sweet corn dish with some exotic Indian spices. I am sure you will love this mouthwatering recipe 🙂
Servings: 2-3 people
Ingredients:
- Boiled sweetcorn seeds – 2 cups
- Chopped onions – 2 medium size
- Tomato puree – 3 medium size
- Green chilly – 2
- Ginger/garlic paste – 2 tsp.
- Cashew (7-8)
- Almond (4-5)
- Milk – 1/4 cup
- Salt
- Black pepper – 1/2 tsp.
- Cardamom powder – 1/4 tsp.
- Garam masala – 1 tsp.
- Turmeric powder – 1/4 tsp.
- Chilly powder – 1/2 tsp.
- Coriander powder – 2 tsp.
- Kastoori methi – 4 tsp.
- Lime juice – 1 tsp.
- Oil
Garnish:
Sauté onion rings, Cilantro
Step 1: Prepare cashew & almond puree
- Soak cashew, almond in the warm milk.
- Keep it for 15 minutes and make puree using mixer
Step 2: Marinate boiled corn
- In a bowl, add corn, salt (according to taste), 1/2 tsp black pepper, 1/2 garam masala, 1 tsp lime juice, 1 tsp coriander powder, and 2 tsp kastoori methi.
- Close the lid of bowl and let it marinate for 30 minutes
Step 3: Prepare creamy curry with right texture
- Heat the pan on medium flame and add oil
- Add cumin seeds and let it crackle
- Add chopped onion in pan and sauté it until it turn brown
- Add garlic-ginger paste, green chilly and let it cook for 5 minutes to get rid of strong taste of garlic and ginger
- Add tomato puree in the mixture and let it cook for 5-10 minutes.
- Add spices in the mixture – 1/2 tsp. garam masala, salt (according to taste), 1 tsp. coriander powder, 1/2 tsp. red chilly powder, 1/4 turmeric powder
- Add prepared cashew-almond puree, 2 tsp kastoori methi, 1/4 tsp cardamom powder
Step 3: Final touch 🙂
Once gravy is ready, add corn and let it cook for 10 to 15 minutes
Step 4: Garnishing
Sauté ring onion in pan then use for garnishing (Optional)

Ingredients:
- 1/2 small Onion (Chopped onion in small)
- 2 green chilies (Chopped in small)
- 2 tsp. cilantro (chopped in small)
- 1 tsp. gram flour
- Pinch of baking soda
- 1 pack Maggi
- 1-2 cup Oil
Preparation:
Step 1: Prepare Maggi
- Fill deep sauté pan with 1 cup of water
- Heat the water on medium flame for 2-3 mins
- Add Maggi masala in water, mix it well and let it cook for 2-3 mins
- Break the Maggi in small and add it to gravy
- Let it cook until it becomes completely dry
- Turn off the stove and let Maggi cool down completely
Step 2: Prepare the Pakoda dough
- Mix chopped vegetables in Maggi and prepare small balls
Step 3: Fry the Pakoda
- Heat the oil in a pan
- Check if oil is hot enough to deep dry the Pakoda
- Deep fry Pakoda we have prepared in step 2 until it is light brown
- Pakodas are ready to eat. Serve hot with mint chutney or tomato sauce

Ingredients:
tomato (4 small size)
Green Chilly (4)
Ginger (one tsp – “Chopped”)
Garlic (One tsp – “Chopped”)
Cilantro (1 cup – “Chopped”)
Cardamom (4-5)
Cardamom powder (One half tsp)
Clove (4-5)
Clove powder (1/4 tsp)
Garam masala (1/2 tsp)
Black pepper (1/4 tsp)
Coriander powder (1/2 tsp)
Fenugreek powder / Kasturi Methi (1/2 tsp)
Oil (3-4 tsp)
Butter (2 tsp)
Honey (1 tsp)
Sugar (2 tsp)
Panner (200 gram)
Preparation:
Step 1: Prepare gravy
Heat the pan on a medium flame
Put a butter (1 tsp) and an oil (1 tsp) in a pan
Once oil/better is ready, add cardamom, cardamom powder, clove and garlic. Cook for 2-3 minutes until garlic gets light brown color
Add chopped tomatoes, salt. Cover a pan with lid and let it cook for 5-10 until tomatoes become really soft
Let it cool down (5-10 minutes) and liquify in a mixer
Step 2: Prepare paneer
Heat a pan on a low flame
Put an oil, salt and red chilly powder
Add paneer pieces (This is completely your choice, but I recommend square pieces 1/2 cm) and cook it until they get light brown color
Step 3: Last step
Heat a pan on a medium flame
Put an oil (1 tsp) and a butter (1 tsp)
Add chopped ginger and green chilly; Let me cook for 2-3 minutes
Add gravy and paneer which you have prepared using step one and two
Mix it well and add all spices (Salt, red chilly powder, black pepper, cardamom, clove powder, garam masala and coriander powder)
Cover a pan with lid and let it cook for 5-10 minutes
Now add sugar, honey and fenugreek powder, chopped cilantro and let it cook for 3-4 minutes
Garnish:
Chopped cilantro, fried paneer, green chilly, tomato. Serve this dish with naan or chapati.

Coconut Water ( 150 ml)
Ice cubes (2-3)
Preparation:-
Step 1:-
Take mint, lime juice, ginger, ice cubes and coconut water
Step 2:-
Prepare glass – As shown in image, spread salt on board or some clean surface. Make border of glass wet with water and prepare glass for the drink
Step 3:-
Put the stuff we have prepared in mixer ( step 1). Keep mixer in Ice Crush mode

Preparation:
Step 1: Mesh all breads (Add little bit water if you want make process easy)
Step 2: Add meshed potatoes and all spices; Mix them well and squeeze all water out of it
Step 3: Once dough is ready, make rolls as shown in snap shot
Step 4: Keep rolls in a pre-heated oven for 30 mins (Temperature 300-350 )

Black pepper (1/2 tsp. Depends on taste)
red chilly powder (1/2 tsp. Depends on taste)
Oil (1-2 tsp)
Organic boiled eggs (4)
Preparation:
Step 1:
Chop all vegetable (Onion, tomato, green chilly)
Step 2:
Heat the pan on medium flame and put oil
Step 3:
Once oil is ready, put cardamom and cinnamon sticks; Let it fry for a while (1-2 mins. Make sure it does not get dark brown) till it becomes light brown
Step 4:
Add garlic ginger paste and fry it for 1-2 mins
Step 5:
Add onion and green chilly; Fry until onion becomes light brown (4-5 mins)
Step 5:
Add tomato; Let it cook for a while until spiced get mixed well
Step 6:
Add shredded eggs and butter into gravy and mix it well; Add all spices and Cook for 3-4 mins
Decoration: Onion, Green Chilly, Tomato, Mozzarella Cheese (****Don`t forget to add buter ;))

Step 2: Heat pan on medium flame and put olive oil
Step 3: Once oil is heated enough add Jalapeño and Green onion; Fry it for 5 mins
Step 4: Scrum eggs and add butter in it
Step 5: Add eggs+Butter+All Spices in pan; Fry everything for 3-5 mins (Light, medium or well done. All depends on choice)
Decoration:
Mozzarella cheese
